The best thing to do is to start with either who you are most passionate about working with or pick one that seems to be in demand and moving with the market. You may be falling into the "Shiny Bright Object" challenge, which distracts you from making any decisions because you have so many passions.
Write down all your ideas and prioritize according to what matches your expertise and has the best chance of bringing in revenue.

Many ambitious, energetic people who love to learn have multiple passions; I can relate! Most likely there are some common themes and/or ways to narrow the connections in a way that will define the target. Use a white board or sticky notes to "dream storm" all of your interests and then see where you can bucket items together in different ways. Prioritize items that are internally driven (true passion, hopes, dreams) over those externally driven (expectation or perception of others). Also, just because you're good at something, doesn't mean you love doing it. Go with what you love. Happy to help more specifically if you want to set up a call.
