What are a couple of books that explain the process of fundraising from an angel investor perspective?

"Angel Investing: The Gust Guide to Making Money and Having Fun Investing in Startups" by David S. Rose is a good place to start. It's written from the perspective of being an investor, but it's very helpful for those wishing to raise funds as well.

Michael is right, "Venture Deals" (second edition) by Brad Feld is by far the best book and includes a sample term sheet. It is less about angel investment but they do cover convertible notes. http://blog.ycombinator.com/announcing-the-safe-a-replacement-for-convertible-notes This is an alternative to the CN. Also, here is a link to some startup books. http://www.businessinsider.com/read-these-books-before-pitching-vcs-2013-8?op=1&IR=T

If you haven't read Lean Startup, read that before pursuing any investment. Hold on and bootstrap as long as you can is my advice.
